Apple Pie Stovetop Oatmeal

Happy New Year! The holidays are over and it is time to HIT those resolutions in the FACE (but, like, in a good way). I rarely make stovetop oatmeal but this weekend I ate it twice. Sometimes you just want something hot for breakfast and you want it fast! I'm sure we all ate too much food this holiday and stayed up way too late last night (well, not in this house... I have a sore throat and Jason has a sinus infection so we ate cashew cream of broccoli soup, recipe coming soon, and went to bed before 10) but here is a breakfast to get you back on track. This oatmeal is full of green apples, walnuts, ginger, cinnamon, dates, and a few other optional super food toppings to kickstart the year. It's time for a new day, a new year, and a new healthier self. This recipe is easy, delicious, and full of super duper healthy foods (links of health benefits below)!!!! Happy New Year! Ingredients

Oatmeal

  • 3-4 c old fashioned rolled oats (it will be sweeter with less oats)
  • 1 tbsp ground cinnamon
  • 1 tbsp fresh ginger (minced)
  • 1 tbsp lemon juice
  • 2 large green apples, shredded
  • 1 c (medjool or other) dates, pits removed and chopped
  • pinch of salt (or more to taste)

Optional Toppings

  • 1/4-1/2 c toasted walnuts
  • 1/4 c unsweetened shredded coconut
  • 1/4 c coconut milk keifer (coconut yogurt, coconut cream, or almond milk)
  • 1/4 c molasses

Directions

  1. Preheat oven to 450F. Pour walnuts onto a baking sheet and place on the top rack of your oven. Toast for 5-10 minutes. Watch the walnuts like a hawk. Nuts will burn or catch on fire if you don’t keep an eye on them. (TIP: set a timer for 60 seconds and keep restarting and rechecking every minute until they are done.) Cooking time varies, but when you smell the toasty walnuts they are done. Pull out of the oven before they burn! (TIP: toast several cups at a time and store the rest in the freezer to speed up recipes like this in the future).
  2. Wash and roughly chop apples and remove seeds. Grate using a kitchen grater or the grater attachment for a FOOD PROCESSOR!!!!! If you have one then please use it! It will save you SO much time! Using a food processor it will only take you 30 seconds or less to grate your apples and ginger. #worthit I would never grate apples for this recipe if I didn’t have the food processor my mother in law found in her garage. I would just chop the apples up really fine instead.
  3. In a medium sauce pan combine 4 cups of water, chopped dates, minced or grated ginger, cinnamon, grated granny smith apples, salt, and bring to a boil. Once boiling add 3-4 cups of old fashioned rolled oats (if you like it sweeter then only use 3 cups of rolled oats).
  4. Cover with lid and cook for 5 minutes. Turn off the stove and scoop piping hot oatmeal into 3 or 4 serving bowls. Let it cool a bit before consuming (and burning your mouth).
  5. Sprinkle with toasted (or raw) walnuts and coconut flakes. Drizzle coconut keifer or almond milk and molasses over the top.
  6. Enjoy!
